BARCHICK’S LICKS
With Summer kind of here it makes daytime drinking all the more allowed. We’re mixing it up this year, and what better way to do it than sit in the park with some homemade ice lolly cocktails? They’re quick and easy to make, look cool and taste amazing. There are loads of ice lolly moulds out there to make these treats in any shape or size. (BarChick got all ours from Kitchen Sync but Amazon has them all too). BarChick picked her favourite cocktails and turned them into some delicious summertime treats and we think you’ll like them. Just be careful not to put too much booze in, they won’t freeze – but worse case you drink them! Enjoy.
APERITIVO LOLLY – Sophisticated, very Italian, and delicious. Real men and euros will love this one.
100ml San Pelligrino Limonata (or just cloudy lemonade)
15ml Campari (just under a cap full)
10ml sugar syrup
Stir with ice or add 25ml cold water, pour into a lolly mould and freeze with fresh orange zest.
G+T LOLLY– light, refreshing and like the drink, hard not to love. Perfect for dad, mum, the boss and all your mates.
15ml Tanqueray Gin
80ml tonic
15ml sugar
zest of lime
10ml lime
Stir with ice or add 25ml cold water, pour into a lolly mould and freeze with a slice of lime.
ELDERFLOWER COLLINS LOLLY – Delicate, floral and very pretty, one for the girls maybe.
15ml shot of Tanqueray Gin
20ml shot of elderflower cordial
10ml lime juice
zest of lime
50ml Eager apple juice
25ml soda water
Stir with ice or add 25ml cold water, pour into a lolly mould and freeze with apple slices
BELLINI LOLLY– The perfect party piece – sweet and delicious, one for those celebrating. If you’re splashing out use Champagne.
25ml peach puree
60ml English sparkling wine/prosecco
10ml sugar
Stir with ice or add 35ml cold water, pour into a lolly mould and freeze
PINK GINGER COSMOPOLITAN LOLLY– Ladies this one’s for you. Better than any Cosmo out there, it makes up for the bad Sex and
the City did to this classic cocktail.
15ml Belvedere pink grapefruit
5ml fresh lime
15ml ginger & lemongrass cordial
10ml sugar syrup
80ml Eager cranberry
Shake with ice or add 25ml cold water, pour into lolly moulds and freeze with small pieces of candied stem ginger.
DARK N ICEY LOLLY- A little more tropical than the rest, perfect for all Carnival lovers.
15ml Goslings rum
10ml lime
20ml sugar
80ml old Jamaican ginger beer
Stir with ice or add 25ml cold water, pour into lolly moulds and freeze with candied stem ginger.
PINA COLADA LOLLY- Who doesn’t like a Pina Colada when the sun is out? Even the kids will like this just leave the rum out.
15ml Appleton VX Rum
5ml coconut cream
5ml cream
5ml fresh lime juice
80ml Eager pineapple juice
Blend with a few ice cubes until melted, pour into lolly moulds and freeze with fresh pineapple pieces.
STRAWBERRY DAIQUIRI LOLLY- Sweet and almost healthy with those real strawberries, perfect for pudding!
15ml Elements 8 Platinum Rum
10ml lime
20ml sugar
2 strawberries muddled
Shake with ice or add 50ml cold water. Pour into ice moulds with fresh strawberry pieces.
MIAMI VICE LOLLY – Possibly the coolest cocktail on the planet.
Half Pina Colada lolly
Half Strawberry Daiquiri lolly
Does life get better than that? Not really.
Pour the Pina Colada in the bottom of the mould, freeze, then add the Daiquiri and freeze again.
MOCHA MARTINI LOLLY– The perfect pick me up, coffee lovers will be most pleased with one of these.
1 25ml shot of espresso
1 tsp of good qualitychocolate powder
15ml Belvedere vodka
15ml sugar syrup
60ml milk
Shake with ice or add 25ml cold water. Pour into lolly moulds and freeze.
TOMMY’S LAGERITA LOLLY– Boys, and tequila lovers will like this. Its naughty but so nice, take it to the park and start the party.
15ml Ocho blanco tequila
15ml agave syrup
10ml sugar syrup
10ml lime juice
lime zest
50ml lager
Stir with ice or add 35ml cold water, pour into lolly moulds and freeze.
ICE LOLLY MOULDS
In addition to the rockets, rings and more regular moulds, we loved The Zoku ice pop maker, perfect if you’re a gadget geek or in a rush. It is nicely designed to be stored in your freezer and is extremely easy to use for anyone, kids to p*ssheads! The quick freezing process allowed us to be creative with our recipes and designs with extremely quick results. A must have for summer days for everyone!
