Bad ass barman/Rock n Roll moment?
Drinking tequila with axl rose after his gig in my old place of work. He ended up cancelling half his gig at wembley the day after due to “sudden illness”. Not very popular with the rest of the crowd. Somehow this amused me.
Ever done it on a bar?
A gentleman never tells… So no, not on a bar.
What's next for you?
Currently working on getting my bar and restaurant Dabbous up and running. Planned opening mid jan. Concept is stripped down fine dining (read: fine dining without the stuffiness that usually comes with it) on one floor and bad ass cocktail bar in the basement.

If you were to make a barchick cocktail, what would you put in it?
I would make the following
50ml Pisco
15ml Lemon juice
15ml Damson syrup
8 muscat grapes
2 drops plum bitters
20ml cranberry juice
Garnish with viola petals
I call this drink grapes of wrath.
Its floral and tasty but quite deceiving.
