Hiroyasu Kayama heads up this bar, and this dude is more alchemist than mixologist. He's got a handle on the classics but also an insane gift for creating killer cocktail blends. That's probably why this bar has just found itself at number 40 in the 50 Best Bar Awards 2020. Legends. We're always down for farm-to-table dining, but how about farm-to-bar drinking? Kayama has tapped up his parents’ home, just north of Tokyo, and planted botanicals including anise, fennel, mint, and juniper to use on the menu. He also has a 20-litre still filled with his own absinthe concoction, made with bunches of wormwood dry-hanged in what was once his bedroom. Talk about resourceful.
