It's all about the botanicals here, and whether you're a pro or a novice when it comes to gin imbibing, they can hook you up with a gin masterclass with their Bar Manager John (complete with the Bermudian shorts and long socks) who will give you the low-down on some of the bottles sitting pretty on the back bar before you hit up the cocktail menu. Speaking of which: The Ariel was BarChick's vibe. The sweet, herbaceous blend of Botanist gin, St. Germain, fresh lemon juice, vanilla, sugar syrup, and peach bitters is the dreamy accessory to those pastel sunsets, and if you're feeling fruity, The Sloe Motion's combo of Champagne, Blueberries and Sloe Gin is bold, sweet and classy.
