I've been at Dishoom for the past three years, and was lucky enough to have opened their 2011 pop-up on Southbank, Chowpatty Beach, as well as opening the Shoreditch branch. Before that I worked for Hilton Hotels and The Old School Yard.

I once blew up my cooker and most of one wall of my flat attempting to distill my own vodka. Luckily I'd popped to the loo and so avoided it exploding in my face!
Well it would have to be something crazy for you, so... I'd probably go with a Paan Sour: 50ml Woodford 4 lime wedges 2 Demerara sugar cubes A pinch of Pratik Hira Moti paan mix - tastes like the scent of a temple and contains a fair whack of tobacco too!
