I was at Drake and Morgan (The Folly) and now I'm working as a consultant.

Callooh Callay in Shoreditch, Please Don’t Tell in NYC, Experimental Cocktail Club in Paris

FAVOURITE DRINK?

Depends on the company, my favourite drink is the one at the end of a solid nights work... A well crafted rum straight up with my feet up.

Bad ass barman/rock n roll moment?

I will have to say the Friday before Christmas 2011... Our bar manager plugged in his iPod and it was old 80s and 90s classic rock. Customers and bartenders in a sing along stand off between endless jäger bombs and tequila shots. I was lucky to get out alive!

Ever done it on a bar?

Well that depends what you mean by "done it". I believe all the best things should be enjoyed on the bar top. And that doesn't only mean drinks!

What's next for you?

Ultimately my dream is to open a bar on a beach where I'd hire aspiring young bartenders and teach them all the things I've learnt and teach them what makes a good bartender.

Best/worst chat up lines you've heard at a bar?

Best - I came here tonight to drink cocktails and meet a hot guy, I think I'm just about done drinking. Worst -Soooooo... Your place or mine??

Tell us a secret or something we don't know?

Not only do I mix up mean cocktails, I'm also a daemon in the kitchen.

If you were to make a barchick cocktail, what would you put in it?

I would make a twist on a Negroni, something that you could sip on and tell me some wicked stories! I would use Monkey 47 Gin, Campari, Pedro Ximenez and Plum Bitters.

How do you like your Martini?

Vesper with a rich spicy gin and sealed with a lemon kiss.
