Anthony Lai is quite a name on the cocktail scene. He's had a hand in Hong Kong favourites that include Ori-gin , Quinary and The Envoy - boom. This is the badass bar guru in Hong Kong so no wonder people are on the edge of their bar stools when he turns his hand to something new.
This something new is Room 309. It's tiny - 22 seats make this a very intimate space - but what would you expect from a hideaway bar that's essentially a hotel suite? You gotta be in the know to get here. Slip next door to The Envoy and request a 'keycard' at reception, then get cosy in this speakeasy spot. Walnut furniture, Vicrorian-esque grandeur and antique-chic reign supreme. It's enough to make you want to don a smoking jacket, grab a pipe, and recite some Noël Coward.
Essential drinking comes in the form of the Invisible Menu. Channeling more of the mystical alchemy the 309 Bar Team love, it's a collection of eight clear cocktails. Our favourite example? The Crystal Old Fashioned. This see-through stunner uses re-distilled peanut butter bourbon, homemade wood chips bitters and banana concentrate. Yep, it's as crystal clear as the reason skint celebrities go on reality shows. And yep, it goes BIG on rich, deep flavour despite its awesome clarity.
