Turns out the mermaids are the killer team behind this operation - Elfi Fabritius, Aurélie Panhelleux and Julien Lopez are pretty mystical, but don’t go expecting any tails - and the magic potions are the killer cocktails they whip up. In a city obsessed with dark subterranean speakeasies, CopperBay offers a great alternative. With a wall of windows, this is the type of bright and airy space you want to escape to after a long day in the office, with drinkers gathering around the island bar, much like hanging out in a friend’s kitchen. The cocktails are spot on too, with lots of interesting garnishes, big on scent and herbs. We loved their Kuzco Sour with pisco, green chartreuse, apricot juice, basil, lime and sea salt, garnished with a dried apricot stuffed with ground green almonds. Tasty and pretty. .
