The St James Bar at the Sofitel hotel had a v. chic make-over not long before the pandemic. Nothing captures the ambience of both sides of the Channel like deep teal velvet, brass accents and an oil painting of a French cockerel wearing an English military uniform covering the ceiling. The bar team haven't held back with this cool selection of serves that have been inspired by everything from Impressionism and relativism to Iron Man comics and Elton John lyrics. Nothing is beyond your imagination, so expect spherification, carbonation, foams and a few garnishes that'll trick your palate. One serve even uses unicorn cordial. Get ready to have your mind blown.
